Ingredients

  • 14 oz dry pasta (preferably fettuccini)
  • 2 oz La Española Extra Virgin Olive Oil
  • 13.5 oz heavy cream
  • 3.5 oz grated Parmesan cheese
  • Salt and black pepper

    Boil water and add salt. Consult package directions for cooking time of pasta in order to make it al dente.

    Strain and set aside pasta and a small glass of water for cooking.

    While the pasta is cooking, prepare sauce by heating the oil and the cream in a large frying pan or casserole. When it starts to boil, lower the heat and add the grated cheese, stir until it is completely melted and well mixed in the sauce. (If you think it is too thick you can add some of the reserved cooking water to make it to your liking.)

    Add pasta to the pan and stir until well soaked and heated through. Add black pepper according to taste.

    To prepare meat, cut each breast into two filets, season with salt and pepper and dredge first in flour, then egg, and finally in breadcrumbs. Heat the oil in a frying pan and fry the filets until golden brown and well-cooked inside

    Serve the pasta on plates and one chicken filet on each plate. Garnish with some chopped parsley and more grated cheese.
