  • 11 oz flour
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 9 oz grated zucchini
  • 2 eggs
  • 7 oz sugar
  • 4 oz La Española Extra Virgin Olive Oil
  • 1 pinch of salt
  • 2 tbsp grated lemon zest
  • 3 ½ oz chopped walnuts

    Preheat the oven to 180ºC.

    Line a baking pan or loaf pan with baking paper.

    Mix in a bowl the flour, cinnamon, nutmeg, baking soda, and baking powder.

    In another bowl, add the grated zucchini, eggs, sugar, olive oil, salt, and lemon zest.

    Once all the wet ingredients are well integrated, add them to the flour mixture. Stir and add the chopped walnuts.

    Put the dough in the pan and bake at 180ºC for 50 minutes or until a toothpick inserted in the center comes out clean. Let cool before removing from the mold and cutting.
