Zucchini raviolis with spinach and feta cheese

These little courgette ravioli with cheese, spinach and tomato are an easy-to-make delight that use courgette as a substitute for traditional pasta. You can use whatever filling you like and enjoy this delicious dish in no time at all!

Ingredients
- 1 courgette (zucchini)
- 100 g feta cheese
- 50 g grated Parmesan cheese
- 3 sun-dried tomatoes
- 1 handful of fresh spinach
- 2 tsp tomato sauce
- Extra virgin olive oil
- ● Truffled olive oil for serving
preparation

Slice a courgette thinly and set aside. Microwave fresh spinach leaves for 1 minute and set aside.

In a bowl add feta cheese, add grated Parmesan cheese, add spinach leaves. Stir in chopped sun-dried tomatoes, add a drizzle of olive oil and mix and reserve the filling

Arrange the courgette slices in a criss-cross pattern. Fill with the mixture and make small raviolis

Place tomato sauce in the base of the dish. Place the courgette raviolis on top of it. Bake at 180º C for 15 minutes and serve with a drizzle of olive oil
