TOAST WITH OLIVE OIL, AVOCADO, CHEESE AND CHILLI

If you like your toast with a savoury twist, you'll want to include this combination in your breakfast or snack. Avocado and cheese go really well together, but if you add a spicy touch of chilli and a generous amount of olive oil, you'll love this toast.

INGREDIENTS

  • 2 ripe avocados 
  • Chilli flakes or ground chilli
  • Cheese flakes
  • Extra virgin olive oil 
  • Juice of ½ lime 
  • Pinch of salt
  • Slices of toasted bread 

DIRECTIONS

  1. Cut one of the ripe avocados in half, remove the stone and mash with a fork. Reserve ½ of the other avocado.
  2.  Add a splash of virgin olive oil, some chilli flakes, a pinch of salt, the juice of ½ lemon and blend until you obtain a firm, smooth cream.
  3. Cut a couple of slices of bread and toast lightly. 
  4. Spread with the avocado and chilli cream.
  5. Add the cheese slices, thin slices of the reserved avocado, a little more chilli flakes and a drizzle of extra virgin olive oil.

Tip! Use ripe avocados, it will be much easier to mash them with a fork.
