STUFFED ZUCCHINI WITH MEAT

2 large zucchinis
 500g minced beef
La Española Extra Virgin Olive Oil
1 green pepper
1 red pepper
1 red onion
200g of whole cheese
Spices to taste
Salt and pepper

DIRECTIONS

  1. Start with the zucchinis: cut them in half and then score the open halves so that they bake well and dress them with plenty of La Española Extra Virgin Olive Oil. If you find it easier, you can use a kitchen brush to make sure you don't leave any holes unbathed!
  2. Place the zucchinis on a baking tray and bake in the oven for approximately 20 minutes. Tip: you can also use the air fryer without oil to bake the zucchinis, whatever is easiest for you!
  3. While the zucchinis are cooking, dice the peppers and onion and fry them in a hot frying pan with oil until soft.
  4. Add the minced beef (previously seasoned to taste) and mix until it seals with the vegetables.
  5. Once the zucchinis are baked: remove the "meat" from the inside with the help of a fork, scraping the zucchini until just the skin is left. Don't throw it away because it will serve as a tray! 
  6. Add the inside of the zucchini to the pan with the vegetables and the meat, stir until it seals and remove from the heat.
  7. With the help of a wooden spoon, put all the contents of the frying pan into the zucchini shells. Once everything is set, add the cheese on top and return to the oven and set it to  grill mode to toast the cheese!
  8. Eat and enjoy!
