Ingredients

    For the Gazpacho:

  • 2 lb ripe tomatoes
  • 1 clove of garlic
  • 2 oz white bread, torn into pieces
  • 1 medium Italian green pepper
  • 1 small onion
  • 5 oz cucumber, peeled
  • 3.5 oz La Española Organic Extra Virgin Olive Oil
  • 1 oz vinegar
  • ½ cup water
  • Salt, to taste

  • 1.5 oz La Española Organic Extra Virgin Olive Oil
  • Cherry tomatoes, quartered
  • Diced cucumber
  • Fresh parsley

  • 1.

    Peel and chop the tomatoes. The easiest way to peel them is to score an “X” on the base of each tomato with a knife and blanch them in boiling water for 30 seconds. The skin will easily peel away.

    Add the peeled tomatoes, garlic, torn bread, chopped green pepper, peeled onion, and cucumber into a blender.

  • 3.

    Blend the mixture along with the La Española Organic Extra Virgin Olive Oil, vinegar, and water until smooth and creamy.

    For a lighter consistency, add more water as desired. Season with salt to taste and refrigerate until ready to serve.

    Cut the white bread into small cubes and spread them out on a baking tray. Drizzle the bread cubes with La Española Organic Extra Virgin Olive Oil and bake at 430°F until golden and crispy.

    Scoop the chilled gazpacho into bowls with a ladle. Garnish with quartered cherry tomatoes, diced cucumber, and a drizzle of La Española Organic Extra Virgin Olive Oil. Add a sprig of parsley for a fresh finishing touch and serve with the crispy croutons on the side.
