Ingredients

    For the Tortilla:

  • 1.5 lbs potatoes
  • ½ lb onion
  • 3 cups La Española Extra Virgin Olive Oil
  • 8 eggs
  • 3 tbsp La Española Extra Virgin Olive Oil Flavored with Truffle
  • Salt, to taste
  • For the Mushrooms:

  • 1.5 lbs mixed cultivated mushrooms
  • 2 tbsp La Española Extra Virgin Olive Oil
  • Fresh parsley, finely chopped (optional)

  • 1.

    Peel the potatoes and slice them into 1/4 inch thick rounds. Cut these slices into smaller pieces.Peel and finely slice the onion.

  • 2.

    Heat 3 cups of La Española Extra Virgin Olive Oil in a large skillet over medium heat. Add the potatoes and onions, and fry them slowly until soft and tender, about 15–20 minutes. Stir occasionally to prevent sticking.

  • 3.

    In a large bowl, beat the eggs thoroughly. Use a slotted spoon to remove the potatoes and onions from the oil, draining them well. Add them to the eggs, season with salt, and mix gently. Let the mixture rest for 5 minutes. Stir in 3 tablespoons of La Española Extra Virgin Olive Oil Flavored with Truffle for an earthy, luxurious flavor.
