Ingredients

    For Potatoes:

  • 1.75 lbs potatoes
  • 2 cups La Española Mild & Light Olive Oil
  • For Brava Sauce:

  • 3 tbsp La Española Classic Olive Oil
  • 1/2 cup canned tomato sauce
  • 2 tbsp sweet paprika
  • 1 tbsp hot paprika (or substitute with cayenne pepper to taste)
  • 1 tbsp cornstarch (Maizena)
  • 3/4 cup chicken stock
  • Salt, to taste

  • 1.

    Heat La Española Classic Olive Oil in a small saucepan over medium heat. Add the tomato sauce and both types of paprika (sweet and hot). Cook for about 2 minutes, stirring constantly to combine the flavors.

    Dissolve the cornstarch in the chicken stock, then slowly pour it into the saucepan while stirring. Cook the mixture until it thickens to your desired consistency. Remove from heat, season with salt, and let it cool before serving.

    Peel the potatoes and cut them into bite-sized chunks. Heat 2 cups of La Española Mild & Light Olive Oil in a deep skillet over medium-low heat. Fry the potatoes slowly for about 10–15     minutes, ensuring they become tender but not browned. Remove the potatoes from the oil and set them aside.

    Increase the heat to high and wait for the oil to become very hot. Add the potatoes to the pan and fry them for a second time until they are golden and crispy on the outside, about 5 minutes. Remove excess oil from potatoes by placing them on paper towels.

    Arrange the crispy potatoes on a plate and drizzle brava sauce over them. Serve the remaining sauce in a small bowl on the side for dipping.
