Gourmet Grilled Vegetables with Truffle Oil

Ingredients
- 2 aubergines
- 1 bunch of green asparagus
- 1 red and green pepper
- Cherry tomatoes
- Extra Virgin Olive Oil with White Truffle
- Salt

Thinly slice the aubergines, soak in salted water for 30 minutes to remove the bitterness. Dry very well before grilling.

Cut the cherry tomatoes crosswise.

Cut the pepper into slices.

Cut the stalk off the green asparagus.

Add truffled olive oil to the grill.

When the grill is hot, cook the vegetables in batches, aubergines, cherry tomatoes, asparagus, red and green pepper. Turn to cook on both sides.

Serve with a pinch of salt and Extra Virgin Olive Oil with White Truffle.
