SALMON AND VEGGIES EN PAPILLOTE

Papillote is a simple, clean, quick and very healthy technique that allows you to prepare a variety of dishes full of flavour like this delicious salmon with vegetables with a special touch provided by extra virgin olive oil.

INGREDIENTS

  • 2 loins fresh salmon
  • ½ red onion
  • ½ sliced lemon
  • 50 g sliced fresh mushrooms 
  • 2 cloves of garlic 
  • Extra virgin olive oil 
  • Spices to taste 

DIRECTIONS

  1. Place the salmon loin on a piece of parchment paper. 
  2. Place the onion rings and lemon slices on top of the salmon. 
  3. Add the sliced mushrooms and garlic cloves. 
  4. Add spices to taste and a generous drizzle of extra virgin olive oil. 
  5. Wrap everything in the parchment paper, forming a tight package to facilitate cooking en papillote. 
  6. Place in a medium-sized frying pan and seal with the glass lid.
  7. Cook for 7-10 minutes over medium heat. 
  8. Carefully remove the salmon from the wrapper so as not to break it. 
  9. Add a generous drizzle of extra virgin olive oil before serving for extra flavour. Repeat the process with the other salmon fillet.
