SALMON AND VEGGIES EN PAPILLOTE
Papillote is a simple, clean, quick and very healthy technique that allows you to prepare a variety of dishes full of flavour like this delicious salmon with vegetables with a special touch provided by extra virgin olive oil.

INGREDIENTS
- 2 loins fresh salmon
- ½ red onion
- ½ sliced lemon
- 50 g sliced fresh mushrooms
- 2 cloves of garlic
- Extra virgin olive oil
- Spices to taste
DIRECTIONS
- Place the salmon loin on a piece of parchment paper.
- Place the onion rings and lemon slices on top of the salmon.
- Add the sliced mushrooms and garlic cloves.
- Add spices to taste and a generous drizzle of extra virgin olive oil.
- Wrap everything in the parchment paper, forming a tight package to facilitate cooking en papillote.
- Place in a medium-sized frying pan and seal with the glass lid.
- Cook for 7-10 minutes over medium heat.
- Carefully remove the salmon from the wrapper so as not to break it.
- Add a generous drizzle of extra virgin olive oil before serving for extra flavour. Repeat the process with the other salmon fillet.
