Ingredients

  • 3 eggs
  • 2 egg whites
  • La Española extra virgin olive oil
  • 10 oz of wheat flour
  • 1/2 pint of milk
  • Icing sugar
  • 9 oz of brown sugar
  • 2 oz of corn flour
  • 1 tsp. of ground cinnamon
  • 1 tsp. of ground ginger
  • 1 sachet of instant coffee
  • 1 sachet of baking powder

preparation

  • 1.

    In a bowl, beat 3 eggs with 2 egg whites. Add a dash of La Española extra virgin olive oil.

    Add the brown sugar, milk and mix everything. Add the instant coffee, ground ginger and ground cinnamon.

  • 3.

    Add the sachet of baking powder, wheat flour, corn flour and mix the batter.

    Pour the mixture into a mould lined with baking paper and put it in the oven at 180º for 35 minutes. To see if it is ready, prick the centre of the cake with a knife. If it comes out clean, it is ready.

  • 5.

    Sprinkle icing sugar over the cake and that’s ready to eat!
